baking
The KNEADING Conference invites professional and home bakers, farmers, and millers, oven builders, and innovative community members to participate in hands-on demonstrations and lectures on progressive ideas in the art of wood-fired bread baking and food production, local grain growing and milling, and oven building.
The goal of the conference is to celebrate and inspire the idea of locally growing and milling grain for bread baked in wood-fired ovens as a way to bring the cycle of food production back to a small circle that fosters ecological and community sustainability. At the center of this idea is the need for partnerships between farmers, millers, oven builders, bakers, and community members.
The presence of several portable wood-fired ovens at the conference site will allow participants in workshops to explore first-hand the possibilities of wood-fired baking, as they create superior hand-crafted breads and foods for the conference group to enjoy at snack breaks and community meals.
Optional field sessions on July 31 and August 3 are being offered throughout central Maine by bakers who use wood-fired ovens. See the Field Session section for detailed descriptions of each session.

Location
Skowhegan, Maine, a small city located in the heart of central Maine sits on the beautiful Kennebec River, an hour and a half drive north from Portland, and an hour's drive south of Bangor. Central Maine offers an idyllic setting in August, with endless opportunities for exploring the Maine wilderness and countryside. Bangor International Airport and Portland Jetport service the central Maine area.

Conference registration includes three meals a day and snacks, created from all fresh local ingredients. The portable bake ovens will be used by workshop participants and the local caterer to bake breads and cook meals. Conference participants are responsible for booking lodging on their own.
